We first purchased this coffee last year after the coffee placed in the 2012 Cup of Excellence award, placing 20th with a score of 85.53. We are very excited to share it with you again, and this year have selected two very small 10 bag lots: a 100% Pacamara lot from the farm and a 100% Yellow Bourbon lot.
This particular lot from Siberia is 100% Pacamara and we purchased it because we loved the profile
The farm's history dates back to 1870, when Fabio Morán and Etifanio Silva decided to conquer this hostile territory, sowing coffee trees in one of the highest summits of the Apaneca-Ilamatepec Mountain Range. They named the 28 hectares of land Siberia after its chaotic weather conditions, along with its difficult accessibility. One century later, Rafael Silva, brother of Luis Silva, inherited the property.
'I knew this was going to be challenge because it is difficult land to harvest', explained Rafael, a fourth generation of coffee growers from this area. Rafael (also the owner of La Fany) considers himself lucky because he has never had any problems working the plantation.
The estate is located 1450 - 1600 meters above sea level in Cerro El Aguila, between Santa Ana and Chalchuapa, in the Santa Ana region along the Apaneca- Ilamatepec Mountain Range. It sits on the exact opposite side of the mountain from La Fany Estate. All of the coffee is shade grown under Pepeto Cedro and Cypres trees, which protect the coffee from wind and sun.
Rafael is ecologically aware and always looking at ways to improve their processes on their estates. At their wet mill (called Beneficio San Pedro, Rafael recycles all of the coffee pulp produced during processing by creating 'lombricompost' using earthworms which is then used to fertilise the trees. The farm also has natural wind and erosion barriers which help to protect the coffee tree and the soil, and each year they are using less chemical fertilisers.
Siberia has been recognised in the Cup of Excellence many times, with awards won in 2005, 2007, 2008 and 2012.
